The ingredients needed to cook Healthy potato salad:
- Use 600 gr of potatoes (i prefer Anya or charlotte baby ones since they keep their shape, but i also like it with Cyprus or vivaldi varieties too).
- Provide 3-4 of carrots.
- You need 1 of onion sliced.
- Take of Extra Virgin Olive oil.
- Get of Finely chopped parsley.

- Peel the potatoes (if it’s Anya or charlotte no need to peel-just wash them very well) and the carrots. If you have used big potatoes, cut them in 2-3 pieces each so that they get softer more easily..
- In a pot, add the carrots and the potatoes and boil them in water till the get softer but not mashed..
- Once boiled at your preference level (i prefer them to remain a bit crunchy), take them out of the water and slice/cut them in pieces. Let them cool down..
- After 30 mins, Season with salt and pepper, add the onion and the parsley and drizzle with extra virgin olive oil. Mix everything together and add salt at your preference. Enjoy!.
