  1. You need 300 gms of boiled, peeled and roughly smashed potatoes.
  2. You need 1/2 tsp of Whole coriander seeds.
  3. Prepare 50 gms of French Beans.
  4. You need as needed of Fistful of shelled Fresh peas.
  5. Get 50-55 gms of carrot chopped.
  6. Get 30 gms of Small Red Bell Pepper chopped (optional).
  7. Provide 90-100 gms of onion chopped.
  8. You need 120 gms of tomatoes.
  9. Get 2 of green chillies chopped.
  10. Get of as required Little green coriander leaves chopped.
  11. Use 2 tbsp of Veg oil.
  12. Use 1 tbsp of Butter.
  13. Get 1.5 tsp of Chaat masala.
  14. You need 1/2 tsp of Black Rock salt.
  15. You need of as required Hot water.
  16. Prepare of Dry spices.
  17. Use 1 tsp of Cummin/Jeera powder.
  18. Use 1 tsp of Coriander/Dhania powder.
  19. Provide 1/2 tsp of Garam masala powder.
  20. You need 1/4 tsp of Turmeric Powder.
  21. You need 1.5 tsp of Kashmiri Red chilli powder.
  22. Prepare 1/2 tsp of Garlic powder (you can use fresh too).
  23. Get 1/2 tsp of Ginger powder (you can use fresh too).
  24. Get of For serving.
  25. Take of As per requirement Pav Buns as needed toasted in Butter.
  26. You need of as required Onion chopped/ sliced.
  27. Prepare of as required Green Coriander Leaves chopped.
  28. Provide of as required Lemon wedges.
  29. Use of As required Dollops of Butter.

Instructions to make Pav Bhaji:

  1. Prepare the ingredients- vegetables as needed, mix & soak the dry spices in little water and make it like a paste. Peel the boiled potatoes and roughly smash it..

Now take oil and butter in a pan or kadai and first add while dry coriander seeds,once it crackles add onion and saute till its translucent, then add the vegetables except the bell pepper, tomato and potato and cook for 5-10 minutes…then add the bell pepper and the spice paste and cook for 5 minutes or so….add water when required. Add the tomatoes and cook till it soften and cook. Add in little Coriander leaves too while it cooks. It gives a nice flavour to the Bhaji..
  4. Add the smashed potatoes and mix well and then add water as needed may be about a cup. Cover and cook for about 10 minutes. Check consistency, it should neither be watery nor dry, check salt and add if needed.Once done….serve hot with a dollop of butter, onion, chopped coriander leaves and lemon wedges accompanied with warm butter toasted Pav Buns.
